Sunterra Meats Ltd. is Canada’s largest
federally inspected lamb processor and sources high quality grain fed
lamb throughout Western Canada. Sunterra works very closely with producers
to maintain and improve high product quality. In 2004 Sunterra constructed
a one time capacity 15,000 head lamb feedlot utilizing the latest in
lamb feeding technology to assist in providing consistent, quality
lambs throughout the year.
At Sunterra all lambs are graded to Canadian government standards. Grading is
a combination of muscle conformation and GR scoring. The GR (grade rule) measurement
is the total tissue depth of the lamb carcass over the 12-13th rib, 11 cm from
the midline (backbone). A deeper GR measurement indicates a fatter carcass. Optimum
GR measurement is 5 to 12 mm. Less than 4 mm is considered under finished.
Muscle Score is an assessment of the muscularity of the lamb carcass at the shoulder,
loin and hind leg. Muscle Scores range from 1 (extremely poor) to 5 (extremely
good).
The ideal carcass weight of the lamb is 45-60 pounds. This carcass weight has
proven ideal for the Canadian and international markets for use at both the retail
level and foodservice segments.
All Canada’s Freshest lambs are finished on a minimum of 60 days grain
before processing to ensure a mild flavour with a full bite. Most lambs receive
grain for over 90 days. Customers worldwide prefer Canada’s Freshest lamb
